There are two steps to properly grease & flour a pan. These 2 steps are important when making baked goods, especially cakes and quick breads.

If you are just greasing a pan for another purpose, then just follow step #1 or use a cooking spray.

Steps to Properly Grease & Flour a Pan:

1) Dip a piece of waxed paper into your shortening (Crisco). Rub the shortening over the entire baking pan. Be sure to cover the entire interior of the pan.

2) Sprinkle about a Tablespoon of All-purpose flour into the greased pan. Shake and tap your pan until the inside of the pan is completely coated with a thin layer of flour. Then shake out and discard any excess flour (or add a little more if the whole pan did not get coated).

That’s the best way to grease a pan, necessary steps if baking a cake.

Alternate Ways to Grease a Pan

  • Spray your pan with non-stick cooking spray according to the directions on the can.

  • If making cupcakes, use cupcake liners.

  • Use the wrapper from your stick of butter to rub the inside of the pan. This is only good if you are cooking at lower temperatures, if you’re baking above 350° the butter will burn.

  • Rub cooking oil into the pan – but this adds a flavor and oiliness that is not desirable with baked goods.

  • Use parchment paper to line the pan.
